The aim of this grant proposal is the identification of so far unknown odor active compounds that can contribute to the formation of boar taint. This will ultimately lead to a better understanding of the underlying phenomena and to the development of effective approaches for minimizing of the risk of boar taint. Precursors and formation mechanisms that give rise to the previously identified 2-amino acetophenone will be investigated by labelling experiments using stable isotope labelled compounds.
